Ingredients
Dry:
– 150 g all-purpose flour
– 2 tbsp Maeda-en Culinary Matcha Powder
– 1 tsp baking powder
– ¼ tsp salt
Wet:
– 2 large eggs (room temp)
– 150 g granulated sugar
– 60 g unsalted butter, melted (~¼ cup)
Sugar Coat:
– granulated sugar
– powdered sugar
Directions
1. Whisk flour, Maeda-en Culinary Matcha Powder, baking powder, and salt together in a bowl.
2. In a separate bowl, whisk eggs and sugar until pale and slightly fluffy. Slowly add melted butter while whisking.
3. Gently fold in the dry mixture until just combined.
4. Cover and chill the dough in the fridge for at least 1 hour.
5. Preheat oven to 325°F and line a baking sheet with parchment.
6. Add granulated sugar and powdered sugar to their own bowls.
7. Scoop dough into 3 tbsp portions and roll in granulated sugar. Shape into a ball, then coat generously in powdered sugar.
8. Bake for ~11 minutes, until crackled and puffy.
9. Let cool for 15 minutes so they set perfectly.
